Breakfast Skillet

Serving Size: 4-6 portions

Ingredients:

1/2 ground sausage

1/2 cup diced onions and green peppers

2 cups shredded hashbrowns

8 oz sharp cheddar cheese

6 eggs

Salt and pepper to taste

Instructions:

  1. Crumble and brown sausage in a non-stick skillet over medium heat. Drain any fat.
  2. Add the onions, peppers, and hashbrowns. Cook until vegetables are soft and the potatoes starting to crisp.
  3. Beat the eggs and pour over the ingredients in the skillet. Cover and let cook on low heat until the eggs are set in the center.
  4. Uncover and top with the cheddar cheese.
  5. Let stand 5 minutes before cutting into wedges.

Notes: You can add mushrooms, tomatoes, or any other ingredients to create your own version of this simple skillet.
