Ingredients for Batter:
2 tbsp butter
1 egg
1 cup milk
1 1/2 cups brown sugar
1 tsp salt
2 tsp vanilla
3 cups four
1 tsp baking soda mixed with 2 tbsp hot water
Ingredients for Crumble:
1/2 cup granulated sugar
1/2 cup flour
1 tbsp cinnamon
4 tbsp cold butter
Instructions:
- Preheat oven to 350°F and grease a round 9″ cake pan.
- Combine all ingredients for the batter in a large mixing bowl.
- Mix by hand or with an electric beater until smooth.
- In a separate bowl, make the crumble by combining dry ingredients first and then cutting in the cold butter.
- Do not over mix the crumble. It should be lumpy and gravel like.
- Pour batter into the greased baking pan and top with crumble mixture.
- Bake on 350°F for 30 minutes or until the top of the cake is golden brown.
- Let cool prior to cutting and serving.
Notes: You can top with fruit or incorporate berries into the batter for a healthy twist. Blueberries are a popular choice.
