Breakfast Cake

Serving Size: 8 slices

Ingredients for Batter:

2 tbsp butter

1 egg

1 cup milk

1 1/2 cups brown sugar

1 tsp salt

2 tsp vanilla

3 cups four

1 tsp baking soda mixed with 2 tbsp hot water

Ingredients for Crumble:

1/2 cup granulated sugar

1/2 cup flour

1 tbsp cinnamon

4 tbsp cold butter

Instructions:

  1. Preheat oven to 350°F and grease a round 9″ cake pan.
  2. Combine all ingredients for the batter in a large mixing bowl.
  3. Mix by hand or with an electric beater until smooth.
  4. In a separate bowl, make the crumble by combining dry ingredients first and then cutting in the cold butter.
  5. Do not over mix the crumble. It should be lumpy and gravel like.
  6. Pour batter into the greased baking pan and top with crumble mixture.
  7. Bake on 350°F for 30 minutes or until the top of the cake is golden brown.
  8. Let cool prior to cutting and serving.

Notes: You can top with fruit or incorporate berries into the batter for a healthy twist. Blueberries are a popular choice.
