Serving Size: 4-6 portions
Ingredients:
1/2 ground sausage
1/2 cup diced onions and green peppers
2 cups shredded hashbrowns
8 oz sharp cheddar cheese
6 eggs
Salt and pepper to taste
Instructions:
- Crumble and brown sausage in a non-stick skillet over medium heat. Drain any fat.
- Add the onions, peppers, and hashbrowns. Cook until vegetables are soft and the potatoes starting to crisp.
- Beat the eggs and pour over the ingredients in the skillet. Cover and let cook on low heat until the eggs are set in the center.
- Uncover and top with the cheddar cheese.
- Let stand 5 minutes before cutting into wedges.
Notes: You can add mushrooms, tomatoes, or any other ingredients to create your own version of this simple skillet.
