Serving Size: 6-8 portions
Ingredients:
1 pound ground sauasge
6 large potatoes, washed and diced
6 large eggs
3/4 cup milk
1 cup shredded Monterey Jack cheese
1/4 cup onion, diced
1 can green chiles, drained and chopped
1/2 cup grated parmasan cheese
Salt and pepper to taste
Instructions:
- Preheat oven to 350°F and grease a 9″x13″ baking pan.
- Crumble and cook sausage in medium skillet until brown. Drain any fat.
- Spread the diced potatoes in the greased baking dish.
- Top potatoes with the cooked sausage, shredded cheese, diced onion, and drained chiles.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper until frothy.
- Pour the egg mixture over the sausage and potato layers.
- Bake for 30 minutes. The egg should not be set yet.
- Remove and sprinkle with the parmasan cheese.
- Return the pan to the oven and bake for an additional 15 minutes or until the egg is set.
- Let stand 5 minutes before cutting.
