Cheesy Sausage and Potato Casserole

Serving Size: 6-8 portions

Ingredients:

1 pound ground sauasge

6 large potatoes, washed and diced

6 large eggs

3/4 cup milk

1 cup shredded Monterey Jack cheese

1/4 cup onion, diced

1 can green chiles, drained and chopped

1/2 cup grated parmasan cheese

Salt and pepper to taste

Instructions:

  1. Preheat oven to 350°F and grease a 9″x13″ baking pan.
  2. Crumble and cook sausage in medium skillet until brown. Drain any fat.
  3. Spread the diced potatoes in the greased baking dish.
  4. Top potatoes with the cooked sausage, shredded cheese, diced onion, and drained chiles.
  5. In a separate bowl, whisk together the eggs, milk, salt, and pepper until frothy.
  6. Pour the egg mixture over the sausage and potato layers.
  7. Bake for 30 minutes. The egg should not be set yet.
  8. Remove and sprinkle with the parmasan cheese.
  9. Return the pan to the oven and bake for an additional 15 minutes or until the egg is set.
  10. Let stand 5 minutes before cutting.
